Cap Classique is the term used in South Africa for sparkling wines produced using the traditional method (similar to Champagne in France) with the second fermentation in bottle. Produced from 100% Chenin Blanc, the 2017 has delicious, developed brioche aromas. It is mellow and smooth with a marked acidity leading to a crisp finish. The first fermentation was in barrel with the base wine left on lees for six months. This was then bottled on May 18, 2018, for the second fermentation and kept on yeast lees for a further 42 months before disgorgement and final preparation in September 2020.
