Nero d’Avola, the traditional black grape of Sicily, loves the heat of the southern climes and produces structured, full bodied wines. Part of the grapes were picked early, then dried on trays in the sun to produce “Appassimento”. The rest were picked approximately three weeks later. Colpasso is a combination of the two. It exudes dark fruits complemented by a touch of smoke.
