Pale yellow colour and quite bright. A bit messy on first nose, evolving towards iodized notes, shellfish and molluscs, menthol, infusions, wheat. Balanced on the palate with an evolved iodized return, some alliaceous notes, candied lemon, verbena, butter and a powerful and
flavourful umami (seawater) finish.
Cellar Storage:
More piercing bright yellow colour. Nose dominated by acacia honey, candied lemon and quince paste. More fruity and evolved register. More velvety, seductive in the mouth, on candied fruits, quince jelly, soft chalk, acacia honey, and a melted and saline finish.
