Crémant d’Alsace is crafted in a similar fashion to Champagne, with a secondary fermentation in bottle. The Calixte 5 crémant is made from Pinot Blanc. The grapes are fermented in oak barrels and aged for 16 months on its lees – almost twice the minimum required ageing period. This gives quite a broad palate and smooth bubbles. Attractive orchard fruit notes mingle with notes of shortbread and earthy undertones on the nose and palate. 2023-2025 – JB
